Lobster mushrooms are a unique foraged mushroom that are at times highly variable in flavor. Fresh specimens with utterly white flesh on the interior are the best tasting. To cook them, keep it simple! Pan frying or sautéing is absolutely perfect for this dense mushroom. The distinctive bright orange-red color of the mushroom will leach out during cooking, and will leave a colorful juice in the pan. Be sure not to overcook this mushroom, as the flavor and aroma are delicate and can be lost. They are often used in seafood dishes—with actual lobster or crab, or bisque, the seafood aroma is enhanced.
