Description
Chanterelle have a funnel-shaped cap which the stem merges into. The color will vary in shades of yellow, from very pale to very dark. The caps of Chanterelles is about 1-3 inches across.
Chanterelles have a herby and slightly peppery flavor which makes them ideal for sauces. They are also excellent in meat dishes, especially game.
Do not keep Chanterelles for too long. They are best used on the day of purchase. If you cannot use them right away, make sure to store them dry in the refrigerator, for no more than 5-7 days.
